    Located inside the Hyatt Carmel Highlands resort, Pacific’s Edge is their signature restaurant. Here you can enjoy uninterrupted views across the Big Sur while dining. The location is wonderful and if you are in the restaurant during sunset you can watch the sun setting through a huge glass window. The food didn’t disappoint and the presentation of the dishes was impressive.

    We started our evening with two fine glasses of Billecart-Salmon, Brut Reserve, a great way to begin our evening.

    To begin, I ordered the Octopus Confit, with Fingerling Potatoes, Smoked Paprika, Extra Virgin Olive Oil, and Maldon Salt. A delicious starter, the Octopus was well-seasoned and beautifully presented. My partner ordered the Burrata Cheese, with Garden Herbs, Cauliflower, Creme Fraiche, and Extra Virgin Olive Oil. The texture of the Burrata was just right, and was the perfect marriage of ingredients which resulted in a wonderfully refreshing first course.

    Moving on to our main course, I ordered the Chilean Seabass, served with Almond Gazpacho, Basil Oil, Grapes, and Crispy Sun Chokes. It’s easy for Seabass to be bland but this dish was superb, the seasoning was well-executed, and the Seabass was cooked to perfection. My partner ordered the Pacific Wild King Salmon, with a Warm Lentil Salad, Cilantro Oil, Crispy Leeks, Bacon Vinaigrette, and Fennel Pollen. The King Salmon was divine, again the kitchen seasoned the dish well and the presentation was on-point. We added side dishes of Yukon Potato Puree, and Grilled Asparagus.

    We completed our evening by indulging in their dessert menu. We chose a Lemon Pudding Cake with Winter Citrus, Orange, Honey, Almond, and Vanilla Bean Creme Anglaise. A lovely end to the evening, the Lemon pudding was soft and combination of Orange, Almond, Honey, and Vanilla worked really well.

    Our chosen wine for the evening was a bottle of 2008, Corte Riva Vineyards Cabernet Sauvignon, Napa Valley, USA. A bold and smoky wine, well-oaked and full bodied, plenty to talk about while drinking this choice. The stunning views brings a lot to the dining experience at Pacific’s Edge.
