    David Codney
    David Codney is Executive Chef at The Peninsula Beverly Hills, overseeing all aspects of the hotel’s cuisine, including the contemporary market-driven fare at The Belvedere, the only AAA Five Diamond rated restaurant in Southern California for 19 years and a favorite destination for entertainment industry “power lunches.”

    Before joining The Peninsula Beverly Hills in December 2012, Chef David spent a large part of his career at The Ritz-Carlton Resorts of Naples, Florida, where he rose to the position of Executive Sous Chef and was a member of The Ritz-Carlton Task Force, opening new Ritz-Carlton Hotels throughout North America.

    A graduate of the Culinary Institute of America, Codney grew up in Cleveland, Ohio, where he discovered his passion for cooking during high school.

    He has cooked under three Certified Master Chefs and has been a guest chef at the Beard House, the Naples Food & Wine Festival and the Southwest Winter Wine Festival, and he won a Gold Medal at the Javits Center International Food Expo.
     
    Wrath - What makes you angry about the hospitality industry?

    I would not use the word angry but I would say saddened by the need for the “farm-to-table” movement. Food needs to be grown to be eaten. Not grown for looks, shipping or longevity. Before the invention of the refrigerated box car, food was grown and produced for timely consumption rather than factoring in transportation time. The notion that we as chefs need to scour the earth to source corn that tastes like corn and apples that taste like apples is not new. That is why we partner with local purveyors like Chef's Garden and Meat and Fish company so we can ensure we are getting the best of the best and the freshest possible. Not for us to use as a selling point but for our guests to enjoy the craft more.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    A perfect slice of baguette with duck rillette, pickled onions, house fermented mustard,herbs picked minutes before presented served to me by Paul Bocuse and August Escoffier. Sitting at a table watching the sun rise over Acadia National Park. This is what food is all about - a variety of things coming together to create a memorable experience.
     
    Sloth - What do you do to unwind?

    I have many things I enjoy to unwind. But hands down my favorite thing to do is take my motorcycle out for a long ride. No music, no conversation, nothing but my mind relaxing and a constant noise coming from the engine below.
     
    Pride - What are you most proud of?
    David Codney Seven Sins
    Nothing makes me more proud than to see staff I work with or have worked with in the past accomplish their dreams and goals. In those moments, I am reminded how they started off and how I have contributed to developing them on their personal quests. The most rewarding experience I have had in my career is not what I have accomplished, it has been when I have seen the team accomplish more than I have ever thought possible.
     
    Lust - Is there anything that you are still lusting to achieve?

    The interesting thing about goals is that through the process of achieving one goal, you begin to see the next goal develop. I am the type of person who has more goals then time so this is a hard question to answer. But… my biggest achievement would be to create something that stands the test of time. To be a part of something bigger than what I have envisioned.
     
    Envy - who are you most envious of?

    Walt Disney. He had a vision that was ahead of its time. He marketed his product not because he wanted to market but because he wanted others to share in the happiness he had created.
     
    Gluttony - have you ever over indulged?

    Every day off I have I spend time with my two children (Rowan and Chloe) who are 4 years old. I over do everything with them to try and wear them out. In turn I end up wearing myself out. I would rather be exhausted at the end of my life with memories than rested wishing I would have done more.
