Eau du Vai is a hidden gem located in Darlington, Sydney. Eau du Vai is tucked away, and doesn't really have any frontage. It can be found through the back of a hotel, giving it an exclusive feel. It's beautifully designed and almost feels like a private members club in Soho. The cocktails don't disappoint either, especially with the visuals, they look great and are well presented. They may be a little shy of alcohol, but the mixology and textures were a joy.
Our first cocktail was the 'Cold Drip Negroni' it's a twist on the bartender's classic, with Beefeaters Gin, Campari, their own house blend of Sweet Vermouth, and a kick of Cold Drip Single Origin Coffee and Bitters. This cocktail looked and tasted spectacular, and gets a firm recommendation.
Next we ordered 'The Aviator' a homemade Rhubarb and Juniper Puree, Shaken up with Beefeater Gin and Fresh Lemon Juice. Served with a paper place on a candy floss cloud, giving this cocktail a truly unique and interesting look. It has to be experienced to be understood, but I can tell you it's very satisfying.

For our next cocktail we ordered a 'Por Avion', this cocktail was their own take on another classic called Airmail. It's mixed with Encanto Pisco, wonderfully balanced with Spiced Agav and Caramelised Citrus Cordial. Finished with Champagne and Citrus, this is a cocktail to wake up the palate.
Next we ordered a 'Fitzroy Fix' this was a very interesting cocktail, mixed with Tequilla, Yuzu, Apricot and Ceylon Tea. Served with a Citrus Sorbet on the side. This is a very sophisticated drink, perfect for enjoying while talking the evening away.
For our final cocktails we sampled a 'Knick Chic' this was a drink with a little kick, mixed with Havanna Club 7 year old Rum, Orange Liqueur, Lemon Juice, Home Made Strawberry, Balsamic and Basil Reduction. A splendid cocktail.
We had some bar snacks throughout the evening. We sampled their Popcorn with Rosemary Butter and Pecorino Salt, which I have to say was quite possibly the best popcorn I’ve had the pleasure to taste, which is no easy feat. We also sampled their Drunken Manchego Cheese, marinated in Olive Oil, Rosemary and Chilli, served with Flaming Ouzo. We had a spectacular evening with superb cocktails.
