Located in the Carlton Intercontinental hotel in Cannes is their house restaurant, the Carlton Restaurant. It's a fairly casual affair, with some impressive views over Cannes corset. The staff are lovely, and the food in divine. We had a pleasant evening of dining, and sampled the following:
To begin we ordered the Duck Foie Gras, with Kumquat Compote, San Daniele Ham, and a selection of Small Breads to accompany. The Foie Gras was lovely with the fresh bread, a great starter. It was paired with a glass of Sauternes Clos Dady, a complex wine with scents of, apricot, lime, and honey to mention a few. We also had the Fresh Lobster with Beetroot, Raw Vegetable Carpaccio with Parmesan, and Salad. Paired with a glass of Pouilly-Fumé, Château de Tracy 2012. A complete pairing, the wine has an interesting grassy, asparagus flavour. Worked well with the flavours of the dish.

For our main dishes we decided on the Sole Fillet with Hazelnut Crumble and Parsley, Artichole Hearts, and Sweet Pepper Juice Emulsion. A delightful collection of flavours, and paired with a glass of a strong red, a glass of Gigognan Cuvee Cardinalices Chateauneuf du Pape Rhone, France. The dish was delicious, I can't fault it.
My partner had the Veal T-Bone Mushrooms and Broth Potato Gratin with Truffle. The veal was tender and delicious. Another splendid dish, and served with a glass of Chateau Brillette, a deep red berry wine, perfect with meat.
The food was faultless, and the service was just as good. The hotel sets the scene for a wonderful place to dine, we would happily return.
