Tunes restaurant, part of The Set collection, can be found inside the Conservatorium Hotel in Amsterdam. Located in the impressive historic part of the building, this restaurant overlooks Paulus Potterstraat and the Stedeliik Museum.
The interior of the restaurant is very chic; featuring exposed brickwork and a monochrome colour scheme. Adorning the walls are ceiling high black shelves filled with white crockery, adding a fun and quirky touch to an otherwise fairly industrious feeling space.
When we arrived, we were warmly greeted and shown to our table, which impressively offered unrestricted views into the kitchen. We were more than happy sat there, watching the Chefs work their magic.

We opted to try the eight course tasting meals – both the normal menu and the vegetarian menu.
The first course consisted of Anna Gold caviar served with tartar oysters, wheatgrass and yoghurt, with the vegetarian alternative being vern seeds caviar served, similarly, with the wheatgrass yoghurt.
For the second course, we moved on to enjoy the red-legged partridge escabeche served with juniper and walnuts; and the smoked homemade cheese with red cabbage structures from the vegetarian menu.
The third course consisted of two “cappuccinos” – on of oxtail and black truffle, and the other of Jerusalem artichoke.
The next course was a fish course, and we savoured the roasted scallops with chicory, ale and sorrel with the vegetarian option being an equally delicious pumpkin toffee with roasted chestnuts.
The fifth course consisted of a sausage roll served with langoustine, kale and tarragon mustard; and roasted kale with hemp seeds and spirulina.
After which, we enjoyed the hare fillet and the risotto of smoked celeriac which was served with a poached egg.
The normal tasting menu then moved on to chocolate with chestnuts, tonka beans, cranberry and cognac; and the vegetarian menu option consisted of a selection of cheeses.
The final courses included mandarin with structures of carrot and goji berries, and for the vegetarian menu – pineapple with caramel spices and tipsy cake, finished with hibiscus.
To accompany out meal, we enjoyed a 2010 Marsannay Pinot Noir, which was simply beautiful.
All-in-all we thoroughly enjoyed our visit to Tunes. The food was equisite and the service excellent. We would thoroughly recommend a visit if you’re in Amsterdam and looking for some serious fine dining in a chic, relaxed atmosphere. We would certainly love to return.
