Owner and creative force behind Plate, Arnaud is a classically trained chef and passionate restauranteur.
From a young age in France he was heavily influenced by his mother and uncle and the Southern French culture of food and dining where people enjoy traditional, flavoursome, honest food with a modern, creative twist and where people eat and smile and are uninterrupted whilst they eat.
Arnaud has worked for 20 years to recreate this feeling in London, culminating in the shared plates and relaxed dining experience at Plate. Influences also come from the chefs he has worked with including: Gordon Ramsay, Jason Atherton, Gary Rhodes and Richard Corrigan. Wrath - What makes you angry about the hospitality industry?
A lack of commitment from the new generation of chefs. As a young chef myself, both myself and my peers worked tirelessly refining our craft, a trait that is becoming harder and harder to find.
Greed - If all your food fantasies came true what would be on your Plate?
My passion for cooking stems from my French mother, so it would definitely have to be my favourite dish she cooks when I go home, Coquilles Saint-Jacques cooked by Mama Stevens.
Sloth - What do you do to unwind?
I love to read and usually head for a great autobiography or travel book to unwind. One of my favourites is The Perfectionist: Life & Death In Haute Cuisine, it's a must read for aspiring chefs and passionate foodies.
Pride - What are you most proud of?
My recently opened restaurant, Plate, in Shoreditch. It's been a life-long ambition of mine to have my own restaurant and I'm extremely proud of my team, some of whom I've worked with for many years and who help me make the whole operation incredible.
Lust - Is there anything that you are still lusting to achieve?
I'd like to continue the great work we're doing at Plate, as well as continuing to work alongside the Montcalm Hotel Group. Plate is based in their Shoreditch hotel and we look after their event catering at the Marble Arch location too.
Envy - who are you most envious of?
Envy is not something I believe in, I'd rather focus my energy on being positive.
Gluttony - have you ever over indulged?
Unsurprisingly, I tend to over indulge in food and drinks. I eat out as often as possible to see what's new - I most recently dined at Ollie Dabbous’ new venue Hide and it was one of the best dining experiences I've had.
