James Durrant has over 20 years working in the hospitality industry. Originally from Chester, Durrant spent his early career working around Cheshire before moving to London to join the 3 Michelin star Restaurant Gordon Ramsay. After nearly 3 years of working in this high-pressure kitchen James moved on, spending a short time at Michelin starred Juniper in Altrincham, subsequently returning to London to again join Gordon for two years as Sous Chef at Claridge’s.
In 2005 Durrant took on the role of Head Chef at Maze working alongside Jason Atherton. The restaurant won numerous awards, including a Michelin star during its first year of operation, when James won the prestigious Caterer & Hotelkeeper Acorn award for young achievers. In 2008 he became Executive Chef and helped launch the first international branch of Maze in New York, as well as Maze Grill in London.
In 2010 James left Maze to pursue his ambition of opening his own restaurant, temporarily working as a Private Chef for the Rothschild family, and launching The Plough Inn in Longparish, Hampshire in 2012. |

Wrath - What makes you angry about the hospitality industry?
People thinking there is an easy way to succeed in this industry. It’s hard work and there is no shortcut. You’ve got to learn your craft.
Greed - If all your food fantasies came true what would be on your Plate?
Fish, chips, mushy peas and a can of Dandelion and burdock.
Sloth - What do you do to unwind?
Sitting by the side of a lake fishing is perfect, although I don’t get much time for it!
Pride - What are you most proud of?
It is without a doubt my children.
Lust - Is there anything that you are still lusting to achieve?
Every day I try to achieve better than the day before. If you stop and think you’re at the top of your game you will be overtaken quickly.
Envy - who are you most envious of?
The people on the train in the morning who aren’t on the same one as me at night going home!
Gluttony - have you ever over indulged?
Regularly! Taste everything I was once taught. I often get a bit carried away with that!
