    James Walters
    James Walters is a self-taught chef and the driving force behind the successful Arabica Food and Spice Company, and the recently launched Arabica Bar and Kitchen in Borough Market.

    James' passion for Levantine produce began at Borough Market over 14 years ago, where he began selling a small range of simple mezze from an eight foot trestle table. The demand grew rapidly and Arabica Food and Spice has since established itself as an online shop, with an additional outpost in the famous Selfridges Food Hall, market stalls at several London locations and a prestigious list of customers including Harrods, Selfridges, Fortnum & Mason, Harvey Nichols, Marks & Spencers, The Savoy Hotel and The Shangri La at The Shard, London.

    In June 2014 James traded in his stall at Borough Market and opened Arabica Bar and Kitchen. The 80 cover bar and restaurant serves Levantine inspired food and cocktails; and on market days the Arabica street cart offers a range of mezze, pastries and falafel and shawarma wraps to take away.
     
    Wrath - What makes you angry about the hospitality industry?

    The lack of investment in nurturing and developing talent in the hospitality sector. Organisations who don’t value their people. The growing deficit between openings and human resource. The despicable staff poaching culture which is on the rise.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    I’ve just spent an hour contemplating this question and I’m still no closer to finding a simple one line answer. Depends on the time and my mood, but I’m a purist so it would be centred around a particular cuisine rather than a mish mash of stuff dumped on a plate. Sunday Yum cha - Hot and sour soup, dim sum followed by a whole Peking duck followed by Steam egg custard buns. Summer barbecue - Grilled cubes of lamb leg and Liya (lamb tail fat) with a shepherds salad followed Afternoon tea with candied fruits and Kaymak ( clotted cream) Autumnal afternoon in rural Tuscany - Bowl of pici pasta with wild boar ragu followed by a glass of Vin Santo and biscotti
     
    Sloth - What do you do to unwind?

    Get a map, plot a walk with a country pub at the finish line and sink a few pints of brown bubbly beer. Weather permitting play tennis and float in the sea or kick back and listen to music, play back gammon and sip a well mixed drink.
     
    Pride - What are you most proud of?

    I’m not ashamed to admit my failings, my sense of determination, drive to self improve and what I’ve managed to achieve to date after dropping out of school and wasting a few years bumming about.
     
    Lust - Is there anything that you are still lusting to achieve?

    Plenty. I’m passionate and driven about proving to myself that I can develop Arabica into a globally recognised brand. One day, I hope that I will be financially stable enough to be able to dedicate lots of time to sharing want I’ve learnt on my journey and nurturing and inspiring young talent into the industry.
