    Eric Payet
    Head chef Eric enjoys a stellar reputation. Starting out as a specialist pastry chef, he started honing his considerable skills at the tender age of nine in his parents’ restaurant before undertaking professional training in France.

    He started his career in 1998 at Michelin starred Putney Bridge, where he climbed the ranks to become head pastry chef and later senior sous chef under Anthony Demetre. He forged his skills at Arbutus in Soho and Wild Honey in Mayfair, each restaurant gaining a Michelin Star in their debut years.

    He next moved to Club Gascon, another Michelin star restaurant, where he was head of product development. His next move took Eric to Clos Maggiores where he worked with the highly renowned and respected Pascal Ausignac and Marcellin Marc and helped earn Clos Maggiores three AA Rosettes.

    Eric was then headhunted to launch various restaurants and pubs, before launching the Hare Bar and Grill himself with Simon at the end of 2014.
     
    Wrath - What makes you angry about the hospitality industry?

    When customers don't make enough effort to go the extra mile for a better restaurant. For many people, location often comes before the quality of the establishment and it's frustrating when convenience comes first.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    There are too many to pick from, but I have to go back home for this fantasy, the smell of my dad's freshly cooked pastry or my grandmother's jack fruit & smoked pork belly curry. World class moment.
     
    Sloth - What do you do to unwind?

    Going home to Reunion Island & enjoying spending time revisiting the mountain. It's a special place for me. My son loves it there too, so it's nice to share it with him.
     
    Pride - What are you most proud of?

    Speaking and writing in English. Also having a positive effect on my teams between the 2 restaurants it's rewarding seeing them progressing & enjoying their job. Without them I would never be where are I am. All the credit goes to them and is more than I deserve.
     
    Lust - Is there anything that you are still lusting to achieve?

    I would like to be successful in everything I do. Having a positive mind helps me do that. Thinking too much can slow you down but calculated risk is important to acknowledge.
     
    Envy - who are you most envious of?

    Thierry Henry, I wish he still played for Arsenal now. Joking apart, I think Maurice ( my son ) has to be the one I would like to be reborn as. He has the best attribute of what a human should be. A real special person.
     
    Gluttony - have you ever over indulged?

    Yes of course I indulge..... I taste everything. Little by little but lots... Throughout the day.
