Wrath - What makes you angry about the hospitality industry?
Egregious upselling by sommeliers (thankfully increasingly rare), having menu items read to me mid-anecdote, and over-zealous topping up of wine glasses.
Greed - If all your food fantasies came true what would be on your Plate?
Ducasse’s poulet de bresse stuffed with Perigord truffles, Foie Gras and Morels, with Michel Roux’ white truffled macaroni and my Swedish mother-in-law’s Janssen’s Temptation (Anchovy gratin) on the side.
Sloth - What do you do to unwind?
Embark on ambitious weekend cooking projects, read historical fiction, play saxophone, dance when drunk.
Pride - What are you most proud of?
My wife for putting up with me and my daughters for being impeccably behaved in restaurants.
Lust - Is there anything that you are still lusting to achieve?
I want to be immortalized by having the ultimate dry Martini named after me and write the unwritten Flashman novels.
Envy - who are you most envious of?
Happiness is not wanting to be anybody else and I’m a happy guy, although I wouldn’t mind being Johnny Depp or Rod Stewart for a couple of days.
Gluttony - have you ever over indulged?
Yes, infrequently but impressively - most recently dancing until 6.30am in a night club in Porto Cervo, fueled by magnums of Dom Perignon and Stoly Elite.
