Paulo de Tarso was born in Brazil of Italian descent, and moved to the US in his teens. He came to London nine years ago, bringing an international energy and passion.
Paulo has established a firm footing in the restaurant scene as the front man at Bar Boulud London, having been part of some of London’s most iconic restaurants, The Wolseley and Scott’s.
He has a love for the vibrancy and life of the industry and brings a natural charisma and a true love of people to the front of the house. He has won many awards for his work, including Tatler’s Best Front of House in 2010 at Bar Boulud.
My intent is to change the customer service industry in London one table at a time. |

Wrath - What makes you angry about the hospitality industry?
I think if we want to attract the next generation of young talent, we need to pay better, and have more sociable hours. A better respect of work-life balance.
Greed - If all your food fantasies came true what would be on your Plate?
I am a simple guy. Charcuterie board and a loaf of bread and I am in heaven.
Sloth - What do you do to unwind?
I spend time with my wife Heidi, and our 3 boys, Luke, Tristan and Liam.
Pride - What are you most proud of?
I love the charity work I do, and climbing Kilimanjaro for Farm Africa was amazing. In my daily work, looking to inspire the young generation in our industry is very fulfilling.
Lust - Is there anything that you are still lusting to achieve?
Of Course. I think London is becoming the capital of Europe for our industry. I want to make it better than New York.
Envy - who are you most envious of?
Bono from U2. I love him, and he helps so many people...
Gluttony - have you ever over indulged?
Yes... Holidays, time to let out my belt.
