Aged fifteen, Luke Thomas won FutureChef, beating 7,500 people to the title. During his teens he went on to work in the kitchens of some of the country's top chefs and at eighteen, he became the UK's youngest head chef at Sanctum on the Green, a boutique hotel and restaurant.
Now just twenty, he is Chef Patron of several Luke's branded restaurants around the UK and was the creator of Retro Feasts, an exciting six month pop-up restaurant in London.
On television, he has appeared on BBC 2's Great British Menu, Channel 4's What's Cooking?, UK Good Food Channel's Market Kitchen and was the subject of an hour-long BBC 3 documentary called The UK's Youngest Head Chef. Luke's Cookbook is out on June 19th 2014. |

Wrath - What makes you angry about the hospitality industry?
The attitude of some chefs towards young chefs with ambition and being told to 'not run before you can walk' and 'work your way through the ranks'. I completely agree its such an important part of your career to learn the basics and 'do your time' but I do love to see people who take a gamble, not follow the rules and do well by doing so.
Greed - If all your food fantasies came true what would be on your Plate?
Oh, good question as I have too many favourites but a good bit of roasted welsh lamb, fresh mint sauce and some creamed savoy cabbage is where its at for me, delicious.
Sloth - What do you do to unwind?
Enjoy a good drink with some close friends and family, I am a big fan of going to cool bars for lovely tasting cocktails and listening to good music.
Pride - What are you most proud of?
Tough one but I would have to say, when your restaurant is full of people having a great time, loving the food and relaxing with their close and loved ones, its a really great feeling of creating something special. closely followed by my book, although not out just yet a really amazing feeling when you've completed a book and it all comes together with the photography.
Lust - Is there anything that you are still lusting to achieve?
I wouldn't say anything in particular, I am very ambitious and like to make things happen quickly but the key for me is to ensure every day I am learning new things, and more importantly, enjoying every single bit of what I do.
Envy - who are you most envious of?
Jamie Oliver - I absolutely admire what he has done and achieved. From the minute I started watching The Naked Chef as a kid to now getting inspiration from him still, I love eating at his restaurants and watching his social media closely. Its very inspiring and I think he has changed peoples views on food and certainly has done with me. A big, big fan and admire his empire.
Gluttony - have you ever over indulged?
Many times, I enjoy my food and drink too much. Recently in Barcelona, I visited 41 degrees restaurant, this place is just unbelievable. A small 16 seater restaurant service very intricate and high end food, one menu including 41 courses, and when you've finished dish 41 and then worried about being able to move, you're presented with a selection of home made chocolates... So that was a sever case of over indulging but so very worth it.
