Scott Smith is chef / patron of Fhior on Edinburgh’s Broughton Street which he opened with his wife, Laura in June 2018.
Prior to that he launched Norn in Leith in 2016 to great acclaim garnering himself and the restaurant a number of awards and accolades including a listing in the Michelin Guide.
In 2017 Scott was the recipient of an Acorn Award which is bestowed annually upon 30 stars of hospitality in the UK under 30, the restaurant was a finalist for The Caterer’s Menu of the Year in 2017 and it also appeared in both Restaurant Magazine’s Top 100 UK restaurants and The Sunday Times’ Top 100.
One of his greatest plaudits came from revered Guardian critic Marina O’Loughlin who called him “a star”. |

Wrath - What makes you angry about the hospitality industry?
The expectation for chefs to work ridiculous hours because it’s “a passion”, and restaurants who exploit that by not allowing them fair working conditions.
Greed - If all your food fantasies came true what would be on your Plate?
A huge plate of Scottish langoustines and warm butter.
Sloth - What do you do to unwind?
Getting out of the city into the country with my wife and good friends whether it’s walking, foraging or just simply sitting in a country pub.
Pride - What are you most proud of?
What Laura and I have achieved at Fhior in the short space of time it’s been open and of all my team to help us to make it happen.
Lust - Is there anything that you are still lusting to achieve?
I’d like to put the restaurant and Scottish cuisine firmly on the international map.
Envy - who are you most envious of?
Anyone who has eight hours sleep and regular holidays.
Gluttony - have you ever over indulged?
Yes, last Christmas a friend and fellow Edinburgh restaurateur Jerome Henry from Le Roi Fou gave my wife and me enough Foie Gras for about seven or eight people. We ate it in one sitting and I still can’t contemplate the thought of it!
