The Dining Room can be found inside the Park Hyatt in Sydney Harbour, The Dining Room has some of the best views over Sydney Harbour. The staff really understand the art of hospitality, making you feel welcome and being prompt with faultless service. We opted to enjoy a six course tasting menu.
Our first course was Smoked Salmon, with Watercress and a Wasabi Condiment, and Green Apple and Crème Fraiche, a delicious dish, and complimented with a glass of Kurt Angerer ‘Kies’ Gruner Veltliner, Niederosterreich, Austria, 2011.
Our second dish shortly followed and looked fantastic. Southern Bluefin Tuna, with Beetroot and Raspberry, Daikon and Sumac. Paired with a glass of Jamsheed ‘Garden Gully’, Riesling, Great Western, Vic. A faultless food and wine combination.
Our third course was Hunter Valley Escargots, with Spinach and Garlic, and Macadamia and Tatsoi. Paired with Pascal Reverdy ‘Terre de Mainbray’, Sancerre, Loire Valley, France, 2012. Another delicious dish, perfectly executed and very enjoyable.

Our next course was Murray Cod, with Declinaison of Celery, Pear and Comte Cheese, and Caramelised Walnuts. The wine of choice was Swinging Bridge ‘Reserve’ Chardonnay, Orange, NSW, 2012. The Cod was cooked to perfection, and the Pear and Comte Cheese were a delight.
Our fifth dish was the Rangers Valley Wagyu Beef Facon “Pot au Feu” with Chou Farci and Bone Marrow, and Mustard. This was served with a glass of Garagiste ‘Balnarring’ Pinot Noir, Morningont Peninsula, Vic, 2013. Each dish has been faultless, and the Wagyu was no different, it tasted divine.
Our final course was Poached Quince au “Vin Chaud”, with Ginger Bread and Mascarpone, and Cassis Sorbet. Served with Domaines De Theulet and Marsalet Monbazillac, Bordeaux, France, 1982. A fantastic aged wine, with a strong body.
We were treated through a journey of six equally spectacular dishes. The presentation of each dish is excellent at The Dining Room, and the flavours are blended and prepared perfectly. Their pairing choices were perfect, we can’t find a bad word to say about anything we experienced through the evening. We would happily return again, and it gets a firm recommendation from us.
