The Knolls restaurant can be found located inside the Capella hotel in Singapore. The real unique selling point about this hotel is that it’s actually on a private island, making for a very secluded experience, with a rather exclusive feel.
When we arrived we were greeted by a friendly member of the team and were shown to our table. Our table was located outside, overlooking to hotel’s beautiful outdoor pools. We perused the menus whilst we sipped on our glass of Taittinger Prestige Rosé Champagne. The restaurant itself is not overly luxurious; however the menu was certainly intriguing and we could not wait for our food to arrive.
For my first course, I chose the marinated melon with Parma ham, sweet wine and mint, which was a classic combination, perfectly executed with the most wonderful of flavours. My partner chose the penne arrabiata, which was served with aubergine and a tomato sauce, finished with shaved parmesan. Another classic dish that was faultless in its preparation. The flavours were as fresh and delicious as one might hope from such a classic Italian dish.

Following our first course, we opted for the baked, deboned sea bass for two, which was served with a Riviera sauce and a wonderful selection of pan fried vegetables. This dish was simply exquisite; the perfectly cooked, delicate white fish was effortlessly complimented by the sweetness of the vegetables. As side dishes, we added the mashed potatoes - wonderfully indulgent, prepared with cream, butter and olive oil - as well as the homemade ratatouille, which was expertly balanced in flavour and tasted divine.
To accompany our meal, we opted for a bottle of the 2014, Monte Campo Montepulciano d'Abruzzo, Abruzzo, Italy. This complimented our meal wonderfully, with the juicy black fruit palate being balanced by savoury spices.
We were impressed with our meal at The Knolls. The setting was perfect, the food was impeccable, and the service was faultless. We would certainly return here on our next trip to Singapore, and would urge you to do the same.
