Josh is the chef patron of The Pony & Trap, now recognized as one of the most exciting places to eat in the South West, The Pony & Trap was awarded a prestigious Michelin Star in 2011, an accolade which it still holds to this day. The Pony & Trap has also been named as one of the top five gastropubs in the country for the past four years (No.2 in 2018), in the Estrella Top 50 Gastropubs awards.
Josh now has a restaurant portfolio that includes Salt & Malt, a fish and chip shop and seafood restaurant on Chew Valley Lake and at Wapping Wharf; The Kensington Arms gastro pub in Redland; Root at Wapping Wharf, where vegetables are the star of the show and Yurt Lush, a café, bar and bistro at Temple Meads.
Josh has recently founded a catering and hospitality academy in partnership with Weston College called The School of Food, a pioneering new training programme nurturing the catering and hospitality professionals of the future. |

Wrath - What makes you angry about the hospitality industry?
The lack of people coming into it, it’s a great trade to work in. I also think the government could help support the industry more.
Greed - If all your food fantasies came true what would be on your Plate?
You can’t eat everything at once, but I would love a hot and cold shellfish platter.
Sloth - What do you do to unwind?

Pride - What are you most proud of?
The lovely people I work with!
Lust - Is there anything that you are still lusting to achieve?
I want to work forever; if you can get everything done in your lifetime then you’re not achieving enough.
Envy - who are you most envious of?
I don’t envy anyone; you make your own fate. I have respect for people!
Gluttony - have you ever over indulged?
All the time, especially when me and my chefs go on eating tours!
