The Seven Sins of Guglielmo Arnulfo

    Chef Patron, Acciuga
    Guglielmo Arnulfo
Guglielmo Arnulfo was born in Genoa (north west Italy, on the seaside) in 1989. He played rugby at international level until the age of 20 and in the meantime he trained and studied as a lawyer for three years before switching to cooking.

The first high end restaurant experience for him was at “The Cook”, a one star Michelin restaurant in Genoa, he then moved to work with Edoardo Ferrera, who formerly had one Michelin star in Milan at "Don Carlos", at his new restaurant "Vizzi e Virtu" in Genoa.

Prior to opening his own restaurant, the last cuisine was the one owned by Claudio Pasquarelli in Bergeggi, near Savona, another one star Michelin restaurant. In December 2014 he opened Enoteca Rabezzana in Farringdon, for the Italian wine merchant Rabezzana from Turin.

Wrath - What makes you angry about the hospitality industry?
    Guglielmo Arnulfo Seven Sins
The many restaurants that simply give customers what they ask for but do not make the effort to go beyond that and surprise or inspire their diners.

Greed - If all your food fantasies came true what would be on your Plate?
    Guglielmo Arnulfo Seven Sins
A lot of cured meat, in particularly Speck a Tuscan Ham from Casentino.

Sloth - What do you do to unwind?
    Guglielmo Arnulfo Seven Sins
I travel to discover more about food or spend some time on the couch with my wife talking about where to go next time.

Pride - What are you most proud of?
    Guglielmo Arnulfo Seven Sins
I’m really proud of my seasonal menu, because it allows diners to experience different tastes and at the same time creates a complexity of emotion.

Lust - Is there anything that you are still lusting to achieve?
    Guglielmo Arnulfo Seven Sins
To have the opportunity to express other facets of Italian cuisine in a unique venue, for example a huge Luna park of Italian food.

Envy - who are you most envious of?
    Guglielmo Arnulfo Seven Sins
Envy is not healthy and does not allow you to better develop your ideas, I prefer to be reflective and use my memories to pass on to other chefs in my kitchen and my customers.

Gluttony - have you ever over indulged?
    Guglielmo Arnulfo Seven Sins
A few times I have eaten fois gras as a starter, main course and dessert in one meal!
