    Lucy Jones
    Lucy joined Coworth Park in 2016 as head pastry chef, bringing with her extensive experience from some of London’s most luxurious hotels. Starting as a pastry chef at The Ritz, Lucy worked her way to the position of Sous Chef.

    Lucy’s passion and drive for excellence is evident, successfully achieving first place as the pastry winner at the Annual Awards of Excellence in 2013 with the Royal Academy of Culinary Arts. In her role Lucy oversees the pastry kitchen at Coworth Park, reporting directly to executive chef, Adam Smith.

    In her first year as head pastry chef, Lucy developed Coworth Park’s renowned afternoon tea offering by introducing new varieties of sumptuous pastries. Staying true to Coworth Park’s quintessentially British identity, Lucy crafted a new Vintage Afternoon Tea. Available throughout spring, this new tea experience featured a specially selected tea and reimagined classics such as a sweet fondant fancy and a special twist on a Bourbon biscuit.
     
    In March 2017 Lucy hosted her own speaker event at Coworth Park, speaking to guests about her role as well as sharing some insider tips for guests to recreate her creations back at home.

    Lucy’s innovative desserts have become an iconic part of the Restaurant Coworth Park dining experience, with guest favourites being her candied caramelised apple, calvados with crème fraiche and the decadent coffee mousse with masala and house -made ice cream.
     
    Wrath - What makes you angry about the hospitality industry?

    Too many flowers on food and the growing love of vegetables in desserts! I’m old school when it’s comes to flavours - in fact pastry as a whole - I much prefer classic pairings prepared in a modern way. I trained at the Ritz and here I established my passion for classic flavor combinations.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    White truffle scrambled eggs on thick cut sour dough toast is my ultimate dish. I do love egg, bacon and chips too, or a cheese trolley with a glass of Port!
     
    Sloth - What do you do to unwind?

    My other half Lewis is a chef too, so to get time off together and go for a drink and dinner that hasn’t been prepared by us is always a treat. Food and hospitality is a big part of our lives.
     
    Pride - What are you most proud of?

    Truthfully there’s not one moment that I think of. I think being a head pastry chef is a hard job to balance and it’s important to keep moving forward steadily; being able to constantly improve my work and skills is an achievement to me. Looking back, I think I’ve done a lot in 8 years by teaching people, watching them succeed and move themselves forward.
     
    Lust - Is there anything that you are still lusting to achieve?

    Envy - who are you most envious of?

    I don’t really envy people, but if I had to have envy something it’s those people that have more time - there never seems to be enough time in the day to do everything I want to.
     
    Gluttony - have you ever over indulged?

    I love food and I’m not one to do things halfheartedly, so I over indulge a lot. With Lewis being a chef we eat a lot together. I consider it our version of homework!
