    Originally from Kent, Nathan now calls Cornwall his home and is a proud ambassador of all things Cornish. His style of cooking is one of simplicity but with complex flavour combinations using local, seasonal, responsibly sourced ingredients. Nathan was proud to be named the AA Chef’s Chef of the Year 2014/15.

    After attending Thanet College, Nathan’s first professional post was with the late Peter Kromberg at the Intercontinental Hotel, Hyde Park Corner. However, his love for seafood cookery was ignited when he came to Cornwall as a young chef to work with Rick Stein.

    Nathan currently has two restaurants and a pub in Cornwall. In early 2015, Restaurant Nathan Outlaw relocated from Rock to the historic fishing village of Port Isaac and retained its two Michelin stars. It is currently placed at number 2 of the ‘Top 50 Restaurants in the UK’ in the Waitrose Good Food Guide 2017, scoring a perfect 10 for cooking.
     
    His first book ‘Nathan Outlaw’s British Seafood’ (Quadrille) was named ‘Best Cookery Book’ by Food and Travel Awards 2013.

    His second, ‘Nathan Outlaw’s Fish Kitchen’ (Quadrille) was published in 2014 followed in April 2016 by ‘Nathan Outlaw’s Everyday Seafood’. A fourth , a collection of favourites from his kitchen at home, ‘Nathan Outlaw’s Home Kitchen’ is due for publication in April 2017.

    In 2012, Nathan’s interest in the education and training of young chefs saw him join forces with Cornwall College to open Academy Nathan Outlaw offering NVQ level 2 and 3 student chefs and Level 3 Front of House students enhanced learning opportunities. He is also in demand at industry conferences in Britain and Ireland, where his expertise is valued both by those training and experienced chefs.

    Nathan’s easy manner, enthusiasm and obvious passion for his work make him a hit with audiences of all ages both at food festivals and TV programmes such as ‘Saturday Kitchen’, ‘Masterchef Professionals’ and ‘Great British Menu’. His own television series, ‘Hook It, Cook It’ with friend Valentine Warner was broadcast on Fox International Channels throughout 2014/15.
     
    Wrath - What makes you angry about the hospitality industry?

    Rude customers. The majority of people in the hospitality industry work there because they want their customers to have a good time and enjoy themselves. There’s never any need to treat them badly.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    It would be a dish, not a plate…and it would be big enough for me to be swimming in good old-fashioned English trifle. I adore the stuff!
     
    Sloth - What do you do to unwind?

    I love music of all genres. I have a huge collection and have to have something playing most of the time. There’s nothing better after a long day than getting into my car and driving home to some good tunes.
     
    Pride - What are you most proud of?

    At work, my team. Without them I wouldn’t be where I am. Every single one of them whether management chefs, front of house and those behind the scenes like KPs and admin staff give their all. It’s taken me a long time to build a strong team but it’s been worth the effort and I wouldn’t be without them.
     
    Lust - Is there anything that you are still lusting to achieve?

    A work/life balance that gives me more time with my family. It’s something I’m aiming for but never seem to quite manage, but I am gradually getting better at it! I’d also like to travel more. I do travel for work but invariably only see the airport and different kitchens! It would be nice to see more of the world. The problem is that my list of places I want to go is getting longer and longer!
     
    Envy - who are you most envious of?

    People who are ultra organised. I do try and I suppose I am organised to a certain extent but there’s still more to do!
     
    Gluttony - have you ever over indulged?

    I’d by lying if I said no…. but that’s all I’m saying!
