Hallsworth ex- head chef of Nobu in the UK and his native Australia, is the owner of Kurobuta Chelsea and Marble Arch, and a highly skilled and experienced exponent of Japanese cuisine.
He is releasing a new cookbook early this year, ‘Junk Food Japan’, and all of his creations are inspired by his passion for giving Japanese classics a contemporary, sometimes Western, twist.
Kurobuta was formed when Scott spotted an opening in an apparently saturated London market. There was no casual mid-range venue offering top class Japanese cuisine in a relaxed setting. Kurobuta would be a contemporary version of the traditional Japanese tzakaya, a relaxed social setting where guests linger over a drink and tapas style food.
This stripped-back rock 'n' roll concept serving exemplary Japanese food with Scott's signature "East Meets West" stamp has proved a great success with his restaurants in Chelsea and Marble Arch. Further expansion is planned in London and worldwide. |

Wrath - What makes you angry about the hospitality industry?
Short-lived pop-ups and fads constantly coming and going in London. When something is good it has staying power.
Greed - If all your food fantasies came true what would be on your Plate?
As Homer from the Simpsons said, “first best dish stuffed with your second” – mine would be lobster stuffed with nachos!
Sloth - What do you do to unwind?
I unwind by watching a movie on Netflix. I fall asleep so easily in front of a movie, from all the running around that I do, that it can sometimes take a week to get through a single film. The cinema is not worth the ticket price for me!
Pride - What are you most proud of?
I am proud of my kids, Jack, 9, Lily, 7, and William, 5. They are my sounding boards for ideas; Jack will often come up with some crazy ones. Bizarrely, he also tells me that I look like Colonel Sanders from KFC!
Lust - Is there anything that you are still lusting to achieve?
Ah yes – everything! I haven’t even scratched the surface. People who know me well will know that I hate sitting still, I’m hoping for more Kurobuta’s in the future.
Envy - who are you most envious of?
The American comedian David Larry. He wrote the TV series Seinfeld and Curb Your Enthusiasm, he’s brutally honest and slightly rude – I’m envious because he’s hilarious and gets away with it.
Gluttony - have you ever over indulged?
The question is how often! I love food so much I have to try everything on the menu. When I visit a restaurant I always over-order and end up walk out with doggy bags.
