    The Seven Sins of Nik Chappell

    Nik Chappell
    Executive Head Chef, Nik Chappell joined The Slaughters Manor House in November 2014. Born and bred in Doncaster, South Yorkshire, he studied fine art at the University of Derby. Whilst working at local pubs for some extra pocket money at university, Nik began to fall in love with food. 

    Having previously held Head Chef positions at restaurants including L’Ortolan, Mallory Court and The Tudor Room, Nik has won accolades including four AA rosettes during his time at L’Ortolan and enjoys a reputation for creating exciting and expertly executed fine dining menus. 

    Widely regarded as one of the Cotswolds’ most acclaimed restaurants, Nik has continued to offer guests at The Slaughters Manor House menus celebrating regional and seasonal produce. Dishes on the menu can include ‘scorched salmon, beetroot, coconut & passion fruit, and textures of caramel, lemongrass & lime leaf ice cream'.  
     
    Wrath - What makes you angry about the hospitality industry?

    I have no time for anger, however the one thing that can frustrate me at times, is young chefs expecting to be at the top of their game from the start. It’s important to appreciate the time and effort that goes into learning their craft.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    It would have to be a great burger with foie gras.
     
    Sloth - What do you do to unwind?

    There would normally be cider involved.
     
    Pride - What are you most proud of?

    My boys are my greatest pride and joy.
     
    Lust - Is there anything that you are still lusting to achieve?

    I would love to see how far my team at Slaughters Manor House can go in creating new dishes for our guests, and I look forward to seeing what we will achieve as we continue to work together.
     
    Envy - who are you most envious of?

    I feel very lucky with the lifestyle that I have, and have no need to be envious of anyone.
     
    Gluttony - have you ever over indulged?

    Many, many times. It’s hard not to when food is your passion in life!
