Through many years of studying and travelling, the many cultures encountered have inspired new ideas and creations.
After completing a degree at the Higher Institute for Tourism and Hotel Studies in Estoril, Portugal, the involvement in different projects made goals, culinary lines very clear and which path to follow.
At the age of 29, most of the professional career was spent in 5* Hotels and top upmarket restaurants with well-known Chefs de Cuisine, that helped towards developing skills and perfecting new techniques.
The challenge is alive and well, using culinary fusion at the highest level with a touch of Japanese inspiration. |

Wrath - What makes you angry about the hospitality industry?
With the growth within the industry, my personal opinion is that the amount of really good professionals has dropped dramatically.
Greed - If all your food fantasies came true what would be on your Plate?
Kobe, Foie Gras and Toro.
Sloth - What do you do to unwind?
I listen to music, go to good restaurants and spend some time playing video games.
Pride - What are you most proud of?
I’m proud of having amazing parents, they gave me the right education that took me to where I am today.
Lust - Is there anything that you are still lusting to achieve?
Having a desert island with perfect waves just for me, that’s what’s missing.
Envy - who are you most envious of?
I think no one in particular, I don’t look at others achievements, I prefer to plan my own.
Gluttony - have you ever over indulged?
Unfortunately I do, I love eating.
