    The Seven Sins of Raymond Blanc

    Raymond Blanc
    Born in Besançon, France, in 1949, Raymond Blanc is acknowledged as one of the finest chefs in the world. His exquisite cooking has been the major force in Britain’s food revolution over the last twenty years, and as a result he is the recipient of tributes from every national and international guide to culinary excellence.

    Raymond has never been formally trained. He began his career in England in 1972 as a waiter, took over the Rose Revived Restaurant when his chef became ill, and never looked back.

    He opened his own restaurant at the age of 28, ‘Les Quat’ Saisons’ in Oxford, and within just one year the restaurant had reached Michelin Star status.
     
    In 1984 he fulfilled a personal vision, creating the hotel and restaurant, Belmond Le Manoir aux Quat’Saisons which is now synonymous with all that is finest in dining and hospitality, offering an indulgent, yet joyfully informal setting to savour gourmet cuisine and relax in charming, stylish surroundings.

    Belmond Le Manoir is the only hotel restaurant to have achieved and maintained two Michelin Status for 29 years and the only property outside of London to sustain 5 AA Rosettes for that period of time.

    Raymond is keen to share his visions, and to pioneer authentic, simple and delicious food for all. He has written a selection of best sellers, including Cooking for Friends, The Sunday Times’ bestseller, ‘Recipes from Le Manoir aux Quat’Saisons’ and Foolproof French Cookery. He also published a biography in 2009, A Taste of My Life.

    In 2010, Raymond’s TV series Kitchen Secrets aired on the BBC and was followed by a second series and accompanying book in spring 2011. In December 2011, Raymond filled the nation’s tables with festive dishes with the airing of the seasonal special; Raymond Blanc’s Christmas Feast on the BBC.
     
    Wrath - What makes you angry about the hospitality industry?

    Bullies - I cannot and will not tolerate bullies. We are all under pressure yes, we want to do our best - but this is no excuse to treat others badly.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    I am easily pleased! There is absolutely nothing better than freshly picked produce that has been lovingly cultivated. The tastes are just perfect. I also love fresh bread - my mother serves the freshest bread, to have that with some butter and home made jam is wonderful - simple yet delicious!
     
    Sloth - What do you do to unwind?

    To be honest, I get precious little time to unwind. But on holidays, I love to read. My favourite time is also when I spend time with my sons and friends, we cook together and enjoy a meal with some wine. I also go to watch Arsenal - I love my football!
     
    Pride - What are you most proud of?

    My family make me proud. I am extremely proud of all we have achieved at Belmond Le Manoir aux Quat'Saisons. And of course all those who have trained here and then been inspired and gone on to create their own dreams. Nothing makes me smile more when I visit a restaurant opened by someone who we have worked with and seen grow and fulfil their dream.
     
    Lust - Is there anything that you are still lusting to achieve?

    I never sit still - there is always something more to do! For example in our gardens at Le Manoir, I have a fantastic team of gardeners. We praise them and recognise their skills - but that industry needs to pull together to ensure they encourage new blood to keep such passion going. I long for the industry to source sustainability.
     
    Envy - who are you most envious of?

    I am not a jealous, envious person - but perhaps to have a restaurant on the beach in the South of France would be nice, especially when it is raining here - I often wish to be on the beach!
     
    Gluttony - have you ever over indulged?

    Often, now I am a little more considered!
