The Seven Sins of Vineet Bhatia |
Chef Patron, Rasoi |
|
Born in Mumbai, Vineet Bhatia’s influences have been based on the traditions of Indian Life and family. His almost military style training at the Oberoi School of Hotel Management in New Delhi mixed with that one unquestionable Bhatia ingredient “passion” has created some of the most innovative and outstanding cuisine this century. His light and imaginative dishes display a clever balance between innovation and an immense respect for the history of Indian cooking.
Recognised by food critics, fellow chefs and devoted customers alike, Vineet was awarded the highest accolade by Michelin and received his first star in 2001, the first Indian Chef-Restaurateur to do so in 102 years.
“The only way forward is to improve and get better,” he says. His personal venture RASOI also received a Michelin Star in 2006 and has been leading the way with cutting edge and innovative cuisine.
Vineet went down in the history books again when in 2009, ‘Rasoi by Vineet - Geneva’ was awarded its first Michelin Star, thereby making him the second UK based Chef to hold a star outside of the UK and the only Indian Chef to have two stars! |

Wrath - What makes you angry about the hospitality industry?
Taking care of the customer is the heart of the hospitality business. But what do you do with an obnoxious one who throws his weight around, seems to know everything, treats service staff with disrespect and best of all threatens with a nasty online review, lest his demands aren’t met? The “No SHOWS” are a whole different category!!
Greed - If all your food fantasies came true what would be on your Plate?
Love seafood - Lobster, any fresh water fish, followed by a hearty lamb rack in warm spices, and then the best part desserts !! That’s what makes life truly enjoyable!! Oh did I miss cheese - LOOOOve cheese – so that’s got to be on my plate too!!
Sloth - What do you do to unwind?
Listen to music - Pink Floyd or simply be around the family and listen to their stories... always relaxes me!
Pride - What are you most proud of?
RASOI - Having our own restaurant with my wife where we can realise our dreams on a daily basis without seeking any ones approval and we are able to showcase Indian food in a different light!!
Lust - Is there anything that you are still lusting to achieve?
The perfect balance of work and family time.
Envy - who are you most envious of?
Of people who can at the drop of a hat go off on a short break with their family and shun work even for that brief period.
Gluttony - have you ever over indulged?
I’m fine till I reach the dessert course - That’s where it starts to spiral and go all wrong!!
