    The Edge restaurant at the Four Seasons Hotel, Miami, is located on the 7th floor and is the perfect location from which to enjoy the views over Miami. Located on the famous Brickell Avenue, Edge has a modern design but creates a relaxed atmosphere using casual but sophisticated furnishings.

    On our visit to Edge we were shown to our booth, which was spacious and comfortable. With a strong presence of sophisticated design, the room is immediately impressive and provided a lovely start to our evening. We were also very impressed by our friendly waiter who made us feel very welcome and went on to cater well to our needs throughout the evening.

    Having chosen our food we enjoyed two pre-dinner cocktails. The first of these was a Hibiscus Mojito, made with Hum spirit, blueberrys and mint. Far from the traditional mojito, Edge created an unusual but perfect take on the traditional drink. We also enjoyed a Pisco sour, containing Peruvian Pisco, agave, lime, egg white and angostura bitters. Less fruity that the previous cocktail, the Pisco sour lived up to its name and packed quite a punch. However, the flavours weren’t too overpowering and combined to make a wonderful pre-dinner cocktail. For the rest of our meal we enjoyed a bottle of Pignin, Pinot Grigio, Grave, Italy.

    For our starter we shared a seafood mix for two, which included a selection of the restaurants finest seafood dishes. This included a selection of shellfish and oysters, jumbo shrimp, stone crab claws and a lobster cocktail, along with a selection of the restaurants unique seafood sauces. The platter was extremely delicious and the fresh seafood was delightful. The restaurants sauces were particularly impressive and highlighted the delicate flavours without masking them.

    For our main dishes we chose a 7oz Butchers cut filet of beef and a 12oz Delmonico steak. Both steaks were beautifully cooked and the high quality of the beef was very clear. The chef cooked to our specifications and each steak was tender and extremely delicious. We enjoyed our steak with a side dish of roasted asparagus and two of the restaurants impressive homemade sauces, a Malbec jus and a lemon parsley butter.

    We avoided dessert due to a beaten appetite but we were extremely impressed by the dishes served to use throughout the night.
