Bill’s in Brighton can be found inside a converted bus depot, it’s the place to go for weekend breakfasts and after-work dinners. The style of the restaurant is casual with quirky décor, offering the perfect environment for anyone looking for an easy-going dining experience. The menu at Bill’s is extensive, and full of different options including healthier dishes for the health conscious.

We have experienced a few Bill’s in various locations, and were looking forward to visiting Bill’s Brighton. When we arrived we were greeted warmly and shown to our table where we began our evening with a pre-dinner cocktail. I chose the Lemongrass Margarita, which saw AquaRiva Reposado Tequila, lemongrass and fresh lime served on the rocks with a fresh chilli garnish. This was a punchy cocktail which was most enjoyable. My partner chose the Monkey 47 dry gin and tonic which was served with a fresh wedge of lime.

To begin our food choices, I opted to start with the Dakkochi chicken skewers, served in a spicy Korean barbecue glaze with spring onion and lime. The chicken was extremely tender and boasted a lot of delicious flavour. My partner chose the oak smoked chicken liver parfait with Bill’s red onion marmalade and toast. This was a wonderful dish, with the richness of the parfait cut through perfectly by the sweet red onion marmalade.

“Having visited several Bill’s locations across the country we have yet to leave disappointed, and Brighton was no exception.”

For our main courses, I chose the fragrant coconut curry with sugar snap peas, courgettes, lemongrass, ginger and coconut rice, my partner chose the halloumi burger served with tomato hummus, sweet chilli sauce, roasted red peppers, pea shoots, red onion, garlic lemon mayo and a mixed salad. We also chose to add sides of sautéed kale and shallots and sautéed garlic chestnut mushrooms. Each dish was delicious and full of flavour with the highlight being the aromatic and wonderfully crafted curry, this was a real stand out dish for me.

We simply couldn’t pass on dessert, so I chose the decadent warm chocolate brownie, served with warm chocolate sauce and vanilla ice cream. My partner chose the melting chocolate bomb, which saw a chocolate dome, brownie chunks, chocolate sauce, vanilla and chocolate ice cream as well as honeycomb and hot salted caramel sauce. This dessert was quite the centrepiece, and certainly not suitable for those looking to avoid sugar!

Throughout our meal we thoroughly enjoyed a bottle of the 2016, Malbec Tilia, Mendoza, Argentina, which was full of juice dark berry flavour with a sweet vanilla finish.

Having visited several Bill’s locations across the country we have yet to leave disappointed, and Brighton was no exception. We thoroughly enjoyed our evening and wouldn’t hesitate to return.
